The Sakura Santoku knife from Viper is a modern interpretation on a classic kitchen knife designed by Jens Anso and Jesper Voxnaes. These have been cryogenically heat treated to maintain a long-lasting edge and are supplemented by beautiful Zircote wood handles which add character to an already classy design.
Blade: Made from Buderus Nitro B, a nitrogen stainless steel which has been both vacuum and cryogenically treated to ensure a pure, long-lasting edge. All Sakura knives are heat treated to a hardness between 58-59HRC. This santoku knife has a fairly wide flat grind with a satin finish making it the perfect choice for most medium to large sized kitchen tasks.
Handle: Stabilized Ziricote Wood was chosen for its rich character, with a unique appearance sometimes referred to as “spider-webbing” or “landscape” grain figure as well as its durability and resistance to moisture. Viper went with a full tang construction on the Sakura series with the scales being attached via customized stainless screws.
Nitro-B: A German made nitriding stainless alloy with excellent corrosion resistance, a very small carbide size for optimal sharpness and maximum working hardness around 60HRC for edge retention and durability.
