Blade: A thin, sub-1/16″ blade is made from nitrogen-enriched CTS-BD1N stainless steel in a full flat ground, plain cutting edge. The blunt-tip offers enhanced safety while the pattern of small, uniform serrations increases the functional edge length by more than 24% delivering voracious cutting performance, especially on baked goods like bread.
Handle: A durable red polypropylene is injection molded directly onto the tang of the blade to form a tough handle that is nearly impervious to the hazards of food preparation. The handles are molded with a pebble texture for enhanced traction when wet and contoured for comfort. The offset handle design delivers a similar feel to the traditional chef knife, offering plenty of clearance from the cutting surface, while pairing with the thinner blade for a wide range of cutting tasks.
CTS-BD1N:Â BD1N is a high Carbon, high Chromium, Nitrogen-Enriched stainless steel from Carpenter. It offers a working hardness, up to 63HRC, while retaining good toughness and edge stability. CTS-BD1N works well as a knife steel with a fine grain, high corrosion resistance and respectable edge holding ability as well as being capable of handling a thinner (12-15 DPS) cutting geometry.
